Roasted veggie minestrone soup

I love The Pioneer Woman. She is funny, has amazing recipes, and almost makes ranch living seem like something I'd like to do, almost.

One of my favorite PW recipes is her Roasted Vegetable Minestrone Soup.

The only things I do differently when I make the soup are, 1. I add an extra can of diced tomatoes and 2. I cook each step just a touch  longer so my veggies are just a touch softer.

chop your other veggies

cook veggies until they are about half way to soft, then add broth, tomatoes, beans, noodles, green beans and simmer until noodles are cooked.

Serve with crusty bread and fresh parmesan cheese. 

This recipe makes a lot of soup. I usually leave out enough for us to have soup for dinner or lunch twice and freeze the rest.
